Kofta Nihari



Ingredients
Mincemeat ½ kg
Bones 1 kg
Salt as per taste
Garlic Paste 2 tbsp
Onion (finely sliced) 2 medium
Whole Peppercorn 10 -12
Red Chilli Powder 2 tbsp
Corriander Powder 2 tbsp
Cumin Seeds 1 tbsp
Aniseeds 1 tbsp
Seeds of Big Cardamom 1 tsp
Dry Ginger 1 tsp
Pipli 1 tsp
Yogurt 1 cup
Plain Flour ½ cup
Bread Slices 2
Dalda Cooking Oil 1 cup
Directions
Wash & dry mincemeat thoroughly by putting it in strainer and pressing it with both hands.
Put washed bones in the pan along with one onion, peppercorn and 6 – 8 cups of water. Cook until tender and when it leaves a thick stock.
Finely grind aniseeds, big cardamom seeds, dry ginger and pipli. Then add red chilli, cumin and corriander powder to it. Take out 2 tbsp of this mixture and add it to the mincemeat.
Then add remaining spices with yogurt and salt. Add 2 bread slices in the mincemeat and chop it finely in a chopper. Make small balls out of the mincemeat & refrigerate.
Heat Dalda Cooking Oil in a separate pan on medium heat for 3 – 4 minutes and fry sliced onion until golden. Add garlic paste to it for 1 – 2 minutes and then add flour and stir till it gives the desired aroma.
Add the yogurt mixture and stir until oil separates and then add mincemeat balls and stir for 4 -5 minutes.
Strain stock and add to the mincemeat. Let it simmer on low heat for 10 – 15 minutes to enhance the flavour of spices.

Roz mara k koftay ka salan



Ingredients

Mince ½ kg

Onion 1 large

Ginger garlic 1 tbsp

Chili powder 1 tsp

Allspice 1 tsp

Coriander powder 1 tsp

Roasted gram 2 tbsp

Almonds 8 to 10 grinded

Poppy seeds 1 tbsp

Method for kofta

Put altogether in the chopper and grind finely, make into balls adding little water. Keep aside.

Ingredients for salan

Oil ½ cup

Onion 1 large blended

Ginger garlic 1 tbsp

Salt 1 tsp

Chili powder 1 ½ tsp

Turmeric ½ tsp

Coriander powder 2 tsp

Allspice ½ tsp

Yogurt ¾ cup

Method

Heat oil add blended onion and ginger garlic paste, fry well for 5 minutes, add all the dry masala with yogurt. Fry well add koftas and cook till firm. Add 1 cup water for gravy and let it cook for 10 minutes. Serve garnish with chopped coriander.

Subzi Kofta


Ingredients
For Kofta
Boiled Potatoes 500 grams
Cottage Cheese/Cheese 100 grams
Finely Chopped Green Chilies 2 tbsp
Boiled and Chopped Carrots ½ cup
Peas ½ cup
Turmeric Powder 1 tsp
Red Chili Powder 1 tbsp
Cumin Powder 1 tbsp
Corn Flour ½ cup
All Purpose Flour ½ cup
Oil for frying
Salt to taste
For Gravy
Finely Chopped Onion 2
Finely Chopped Tomatoes 4
Garlic Paste 1 tbsp
Turmeric Powder 1 tsp
Coriander Powder 1 tbsp
All Spice Powder 1 tsp
Red Chili Powder 1 tbsp
Cream 1 cup
Oil 2-3 tbsp
Salt to taste
Coriander for garnish
Method
For kofta’s: take ½ kg of potatoes boiled and mashed. Now add ½ cup of peas, ½ cup of carrot , 100 grams of cottage cheese/ cheese, 1 tsp of turmeric powder, 1 tbsp of red chili powder, 1 tbsp of cumin powder , 2 tbsp of finely chopped green chilies, add to taste salt, mix it well make it kofta’. Take 1 plate spread ½ cup of corn flour, take another 1 plate spread ½ cup of all purpose flour, coat it all kofta’s in corn flour and all purpose flour. Heat the oil in a deep wok and fry all the kofta’s and set aside. For gravy: take a cooking pan add 4 tomatoes 2 onions add 2-3 cups of water, boil them and make a paste. Now take a cooking pan add 2-3 tbsp of oil add 1 tbsp of garlic paste fry now add 1 tsp of turmeric powder , 1 tsp of all spice powder , 1 tbsp of red chili powder , 1 tbsp of coriander powder add to taste salt mix it well and roasted now add some water and add kofta’s. At last 1 cup cream cook 2-3 minutes and take it out in a serving bowl and garnish with coriander and serve it. Delicious sabzi kofta is ready.

Haray Masalay Kay Koftay Ki Biryani Recipe by Zubaida Tariq


Ingredients
Chicken Mince ½ kg
Rice2-2 ½ cup
Bread slices2
Black Chick peas2 tbsp
Cumin seeds 1 tsp
Black cumin seeds1 tsp
Poppy seeds1 tbsp
Green coriander1 bunch
Green chilies8
Garlic6
Onions (chopped)4

Crushed black pepper 1 tsp
Lemons3
Mint leaves½ bunch
Black peppercorn4
Oil1 cup
Butter2 tbsp
Fresh Milk½ cup
Yellow food colora pinch
Saltto taste.

Method

Wash and soak rice. Now grind 2 tbsp black chick peas, 1 tbsp poppy seeds, 1tsp white cumin seeds and 1 tsp black cumin seeds in a grinder. Separately blend 1 bunch green coriander, 8 green chilies and 6 garlic cloves in the blender and make chutney out of it. Add some salt in it. Now take ½ kg chicken mince, 2 bread slices and grinded spices in a chopper and chop everything together. Take it out and add some salt and make small meat balls out of it. Take 1 cup oil in the pan and fry chopped onions till they are golden brown. Then take the fried onion out on a tissue paper to make it dry and crisp. Ad 1 tsp turmeric powder, 1 tsp crushed black pepper and green chutney in the same oil. Cook it for some time and then remove it from the stove. Separately fry the meat balls and then add them in the prepared mixture. Cook it for some time and then add lemon juice in it. Simmer for 5 minutes. Add some salt , ½ bunch of mint leaves, black peppercorn, green chilies in the rice and boil them. Grease a wok and layer half of the rice in the bottom of the wok and then spread the prepared mixture on it. put some fried onion it and cover it with the other layer of rice. Add yellow food color, lemon juice and 2 tbsp butter on the top. In the end, dish it out and garnish it with meat balls and fried onion. Serve hot.

METHOD:

For making kofta, in pan fry sesame, cumin seeds, peanuts, button red chilies, and grind. In a chopper, process minced beef, fried masala powder, ginger garlic paste, salt.

Now add an egg and mix and make koftas.

Heat oil in a pan and fry the koftas.

To prepare pulao, Heat oil and fry onions. Then add chicken, whole garam masala and ginger Garlic paste. After frying well, add salt and stock and let it cook for 10 minutes on low flame.

Now add cooked rice, mint leaves and green chilies and cook. When water dries, let it simmer for 10 minutes, mix koftas in rice and off the flame.

Kofta Burger


Ingredients
For Burger
All Purpose Flour ½ kg
Yeast 1-1/2 tbsp
Egg 2
Baking Powder 2 tsp
Sugar 2-3 tbsp
Salt to taste
For Kofta
Beef Mince ( Double Grinded) ½ kg
Onion 1
Roasted and Powder Chick Peas 2-3 tbsp
Chopped Ginger Garlic 1 tbsp
Red Chili Powder 1 tbsp
Cumin Powder ½ tsp
Crushed Black Pepper ½ tsp
Baking Powder 1 tsp
Clarified Butter or Oil for deep fry
Salt to taste
For Filling
Chili Garlic Sauce ½ cup
Lettuce Leaves as required
Cheese Slice as required
Method
For burger: Take a mixing bowl ½ kg all purpose flour,add 1-1/2 tbsp of yeast, 2-3 tbsp of sugar , 2 tsp of baking powder,and add to taste salt mix it well, and make a dough and place the dough in a warm place, when the dough is raised and set it into mould and leave it ½ an hour , place the dish in a preheated oven and bake it for 12-15 minutes on 200 C. and take it out and serve it. For kofta: Take a cooking pan add 1 chopped onion fry on a high flame. Now take a chopper add ½ kg of mince (double grinded), with fat, add fried onion, 2-3 tbsp of crushed and powder chick peas, 1 tbsp of chopped ginger garlic,, 1 tbsp of red chili powder, ½ tsp cumin powder, ½ tsp of blackpepper and add to taste salt and make a paste. Now make a kofta and shallow fry till its golden brown and set aside. For filling: Take burger buns spread ½ cup of chili sauce add kofta , as required lettuce leave, as required cheese and close with a burger and serve it.

Kafta BBQ Recipe


Recipe Ingredients

1 1/2 pounds lean ground beef
1 medium onion, grated
1/2 cup finely chopped fresh parsley
1/4 teaspoon cayenne pepper
1/4 teaspoon ground allspice
1 teaspoon salt, or to taste
1/4 teaspoon black pepper
6 wooden or metal skewers

Recipe Method

Preheat an outdoor grill for high heat. If using wooden skewers, soak in water.
In a large bowl, mix together the ground beef, onion, parsley, cayenne, allspice, salt and pepper until evenly blended. Divide into 6 portions, and press around one end of the skewers to form a log shape approximately 1 inch thick and 6 inches long.
Grill for 10 to 15 minutes, turning occasionally, until meat is no longer pink.

Mince ½ kg
Egg 1
Green cardamom 6
Cloves 6
Black cumin ½ tsp heaped
Poppy seeds 1 ½ tsp
Salt 1 tsp
Raw papaya 1 tsp
Onion 1 large (ground)
Coconut 1 tbsp (desiccated)
Gram 1 tbsp (roasted)
Mace ½ tsp (grinded)
Nutmeg ½ tsp (Grinded)

For Gravy:

Brown onion ½ cup (ground)
Coriander powder 1 tbsp
Chili powder 1 tbsp
Ginger Garlic 1 tbsp
Yogurt 1 cup
Salt to taste
All spice ½ tsp
Oil ½ cup


Recipe Method

Blend together mince, green cardamom, black cumin, cloves, poppy seeds, raw papaya, onion, coconut, gram, mace and nutmeg.
Add egg and mix well.
Make into small balls and shallow fry till light golden.

For Gravy:

Heat oil, add ginger garlic paste with salt, chili powder, coriander powder, brown onion and yogurt, stir fry for 5 minutes.
Add 1 cup water, when water starts boiling add koftas and cook till oil comes on top.
Lastly add all spice and remove.






Malai Kofta Recipe

Recipe Ingredients

Potato – 1 large (boiled and peeled)
Paneer – 8 oz
Frozen Green Peas – 1/3 cup
Carrot – 1 (shredded)
Cilantro – 5 sprigs (finely chopped)
Cashews/Golden Raisins – 1/4 cup (roughly chopped)
Cooking Spray
Oil – 2 Tbsp
Onions – 3 medium (food processed or chopped finely)
Pureed Tomatoes – 2 cups
Ginger/Garlic – 1 Tbsp (minced)
Salt – to taste
Sugar – to taste
Garam Masala – 1 tsp
Coriander Powder – 2 tsp (divided)
Cumin Powder – 1 tsp (divided)
Chaat Masala – 1/2 tsp
Turmeric Powder – 1/4 tsp
Red Chili Powder – to taste
Evaporated Milk – 5 oz can
Milk – as needed

Recipe Method

For the Gravy:

Heat Oil in a medium pan.
Add Onions and salt — saute until moisture is evaporated.
Add Ginger and Garlic and cook for 1-2 minutes.
Add Pureed Tomatoes and cook until Oil separates from the mixture.
Add in Turmeric Powder, Cumin Powder, Coriander Powder, Red Chili Powder and Garam Masala — mix well.
Add Evaporated Milk and stir.
Add Milk to make the gravy to desired consistency.
Add sugar to taste and check salt.
Bring Gravy to a boil and switch off the stove.

For the Koftas:

In a microwave safe bowl, cook Peas and Carrot with 2-3 tablespoons of water for 3-4 minutes.
Squeeze out all excess water from the above mixture.
In a food processor with a chopper blade, process paneer.
Add Boiled Potato and again process until a dough is formed.
Remove dough from food processor and place into a bowl.
Add Peas & Carrots, Cilantro, Cashews/Golden Raisins (reserve a little for garnishing), Salt, Coriander Powder, Cumin Powder and Chaat Masala — knead well.
Line a baking tray with foil and spray with Cooking Oil.
Roll Koftas into small Golf Ball size balls and place on baking tray.
Lightly spray Cooking Oil on all of the koftas.
Place tray in the oven and Broil on High until koftas turn a golden brown.
Flip koftas to the other side and broil once again until golden brown.
Remove koftas from oven and allow them to cool slightly.
Arrange koftas in a casserole dish and cover them with the gravy.
Garnish with remaining cashews and raisins.
Cover the dish and bake in the oven at 350 degrees (F) for 15-20 minutes.
Serve hot with Naan or Rice.
