Ginger mutton curry



Ingredients
Mutton ½ kg
Lemon 2
Onion chopped 2
Green chilli chopped 10
Oil 1 cup
Yogurt ½ cup
Turmeric 1 tsp
Ginger garlic paste 1 tbsp
Black pepper crushed ½ tbsp
Salt as required
Method
Fry onion in oil till it turns golden brown. Now add ½ kg mutton, salt, 1 tbsp ginger garlic paste and 1tsp turmeric and cook. Then meat water dries ½ cup lukewarm water and cook till meat tender. Add ½ cup of yogurt and sauté it. When oil form a separate a layer, put ½ tbsp crushed black pepper, chopped green chillies, ginger and lemon juice and cook it on low flame for 10 minutes. Serve it with hot naan.

Mutton Curry by Zarnak Sidhwa


Ingredients:
Mutton 1/2 kg
Finely chopped onions 2
Tomatoes pureed 3
Potatoes 2
Black cardamoms 2
Green cardamoms 4
Cinnamon 1-1/2 inch piece
Cloves 5-6
Bay leaves 2
Mace few strands
Dried red chillies 4
Peppercorns 6
Coriander seeds 1 tsp
Cumin seeds 1 tsp
Aniseed 1 tsp
Kashmiri red chilli powder 2 tsp
Sugar a pinch
Turmeric powder 1-1/2 tsp
Green chillies 2
Oil as required
Salt to taste
Garam masala powder 1 tsp
Garlic 10 cloves
Ginger 2-inch piece

Method:
In a pan, add the coriander seeds, cumin seeds, aniseed, 4 dried red chillies, 6 peppercorns and roast till fragrant. Once roasted, add the above to a blender along with 5 cloves of garlic and one inch of ginger, roughly chopped. Add 2 tsp of Kashmiri red chilli powder. Add 1-½ tsp of turmeric powder, 1 tsp of salt and a pinch of sugar.

Add about one tablespoon of oil and half a cup of water and grind to a fine paste. Crush the rest of the 5 large garlic pods roughly and julienne the 1 inch ginger. Heat the oil. Fry the potatoes in the oil. The potatoes should be seared, evenly browned but not cooked. Remove and keep aside. Now add black cardamoms, green cardamoms, cinnamon, cloves, bay leaves and the mace. Add the crushed garlic and the juliennes of ginger to the oil. Fry them for about a minute. Now add the finely chopped onion and add a pinch of salt to help it fry faster. Fry the onion, stirring constantly, till they get browned and caramelized. Add the mutton pieces to this. Fry the mutton pieces on high heat. The mutton will sear and turn a light brown. Add the ground spices and fry it with the meat. At this stage, add back the potatoes and let the meat cook till done. Break two green chillies and one tsp of garam masala powder and stir.
Serve with steamed rice.

Dilpasand Mutton Recipe

 


Ingredients:

Mutton 1 kg
Yogurt ½ kg
Poppy Seeds 1 tbsp
Sesame Seeds 1 tbsp
Desiccated Coconut 1 tbsp
Ginger Garlic Paste 1 tbsp
Tomato Paste 1 cup
Almonds (slices) 2 tbsp
Turmeric Powder 1 tbsp
Salt 1 tsp
Coriander Powder 1 tbsp
Garam Masala Powder 1 tsp
Finely Chopped Ginger 2 tbsp
Oil ½ cup
Onions (slices) 250 gms


Method:

• In pan, add mutton, water, salt, turmeric powder, and coriander powder, onion slices, ginger garlic paste and cook on low flame.
• When mutton tenders, low the flame.
• Dry roast poppy seeds, sesame seeds, and desiccated coconut and grind. Now add ground masala, tomato paste, yogurt and oil.
• Fry well and add water and let it cook for 10 minutes.
• Remove the mutton from the stove and sprinkle chopped ginger and garam masala powder

Dilpasand Mutton Recipe


Ingredients:
Mutton 1 kg
Yogurt ½ kg
Poppy Seeds 1 tbsp
Sesame Seeds 1 tbsp
Desiccated Coconut 1 tbsp
Ginger Garlic Paste 1 tbsp
Tomato Paste 1 cup
Almonds (slices) 2 tbsp
Turmeric Powder 1 tbsp
Salt 1 tsp
Coriander Powder 1 tbsp
Garam Masala Powder 1 tsp
Finely Chopped Ginger 2 tbsp
Oil ½ cup
Onions (slices) 250 gms

Method:

INGREDIENTS:

Meat ½ kg

Lemon 3

Roasted and Crushed Cumin 1tsp

Crushed Red Chilies 1 tbsp

Crushed Raw Papaya 1 tbsp

Ginger Garlic Paste 1 tbsp

Tikka Masala 2 tbsp

Oil as required

Salt to taste

METHOD:

Put ½ kg meat in a bowl after washing it. Now add 3 lemons, 1 tsp roasted and crushed cumin, 1 tbsp crushed red chilies, 1 tbsp crushed raw papaya, 1 tbsp ginger garlic paste, 2 tbsp tikka masala and salt to taste and keep it for 30 minutes. Now put them on skewers and grill them or grease them and put them on griller. When water evaporates, then apply oil with the help of the brush. Delicious mutton tikka masala is ready.

Mutton chops 750 gm
Oil ¼ cup
Yogurt ¼ cup
Lemon juice 3 to 4 tbsp
Papaya paste 1 tbsp
Salt to taste
Red chili powder 1 tbsp
Red chili 1 tsp (crushed)

Recipe Method

Marinate chops with oil, yogurt, papaya paste, salt, red chili powder, crushed red chili, ginger garlic paste and saffron all spice powder for overnight and keep into fridge.

Recipe Ingredients

1 kg mutton chops (cutlets)
4 tbspns yogurt
½ cup vinegar
Salt to taste
2 cloves of garlic crushed
1 tbspn crushed ginger
4 tbspns oil
1 green chilli crushed
1 tspn cracked black pepper
1 tspn red chilli flakes
½ tspn carom seeds
1 tbspn garam masala
2 big cardamoms
2 pieces of cinnamon
½ tspn cumin seeds
4 cloves

SPECIAL REQUIREMENTS:

1 piece coal
Some oil
2 x 2 aluminum foil

Recipe Method

Combine all the ingredients given for garam masala in a spice grinder and grind to a coarse powder.
Marinade meat in garam masala, yogurt, and all other spices and vinegar for 8 hours.
Heat oil and fry ginger, garlic and green chilli paste in it.
Now add the marinated meat and let it cook on low heat for about an hour or when the meat is tender. It will not burn or stick to the bottom if you don’t cook it on low heat and use nonstick pan.
Now on high heat stir fry it until the chops are red and gives a roasted look.
Heat the charcoal until its white. Place the foil on the top of roasted chops, pace the coal on it with the help of tongs and then drizzle some oil on it and cover it with the lid.
After 10 minutes remove the coal and serve hot with naan, salad and raita.


Hyderabadi Mutton Biryani Recipe

Recipe Ingredients

1 kg Rice
1 kg Mutton
10 gms Cardamom
10 gms Cinnamon
10 gms Cumminseed
10 gms Cloves
40 gms Ginger
20 gms Garlic
100 gms Green Chillies
50 gms Fried Onion
1 bunch Coriander Leaves
1bunch Pudina
2 Lemon
1/4 Curd
1/4 kg Ghee

Recipe Method

Wash mutton and take it in a vessel.
Grind green chillies, ginger, garlic, spices, fried onion, and mix them all, then add this mixture to the meat.
Then add curd to it, mix the stuff thoroughly. Leave the material for half an hour.
Take 2 litres of water in a vessel and put it on the stove.
When water boils well put the rice in the vessel. Take out the semi-cooked rice and spread it on the meat and spices mixture as a layer. Take some more rice and spread as second layer. Finally, spread the fully cooked rice.
Prepare a mixture of one cup of boiled water and 1/4 kg ghee and spill it on the rice.
Now put a plate on the vessel and seal the edges with dough. Put the vessel on the stove, cook for 15 minutes on medium flame.
Then turn off the stove. Leave the stuff for 15 minutes.
Hyderabadi mutton biryani is ready to serve.


Darbari mutton

Ingredients

Mutton ½ kg

Onion 1 cup chopped

Kashmiri red chilies 6 soaked and grinded

Khoya ½ cup

Allspice 1 tsp

Yogurt 1 cup

Sesame seeds 1 tbsp grinded

Poppy seeds 1 tbsp grinded

Cashew nuts 8 grinded

Green chilies 4

Coriander leaves 2 tbsp

Ginger garlic 1 tbsp heaped

Salt 1 tsp heaped

Tomato puree 2 tbsp

Method

Heat ½ cup ghee fry chopped onion till light golden, add grinded red chilies with ginger garlic paste, salt, and tomato puree, fry well, add in the grinded masala of sesame seeds, cashew and poppy seeds, add 1 cup water with mutton. Cover and cook till nearly done. Add Khoya, yogurt, fry well and leave it on dum. Serve garnish with chopped coriander leaves and green chilies.

Bombay darbar biryani with biryani masala

Ingredients for biryani masala

Nutmeg 1

Mace 5 blades

Green cardamom 15

Black cumin 1 tsp

Cloves 1 tsp

Black pepper 1 tsp

Anis star 4

Cinnamon 4 sticks

Deghi laal mirch powder 4 tbsp

Chili powder 2 tbsp

Coriander powder 4 tbsp

Salt 1 tbsp

Turmeric 1 tsp heaped

Aalu Bukhara 15 whole

Bay leaf 3 whole

Green cardamom 15 whole

Black pepper 15 whole

Cloves 15 whole

Cinnamon 4 sticks whole

Method

In a coffee grinder, grind together nutmeg, mace, green cardamom, black cumin seeds, cloves, black pepper and anis star finely. Mix with powdered spices, aalu Bukhara and whole spices, mix well. Preserve in an air tight bottle.

Ingredients for Bombay darbar biryani

Oil ¾ cup

Mutton 750 gm

Brown onion ½ cup

Ginger garlic paste 1 ½ tbsp heaped

Yogurt 1 cup

Chili powder 1 tsp

Salt 1 tsp

Yellow color ¼ tsp

Kewra water 1 tbsp

Rice 750 gm soaked and boiled with 3 tbsp salt

Prepared biryani masala 3 tbsp to 4 tbsp heaped

Method

Heat oil, add ginger garlic paste, brown onion and mutton, cover and leave it for 10 minutes then add yogurt, mixed with biryani masala, cover and leave it for 10 minutes, then add salt, chili powder with 1 ½ cup water, cover and cook for 20 minutes till mutton tender and thick gravy left.

To assemble

In a pan put ¼ cup oil and water, add ½ quantity of boiled rice top with mutton mixture, remaining quantity of rice, brown onion, yellow color mixed with Kewra, cover and cook on high flame for 5 minutes, lower flame and leave it on dum for 15 minutes.

Recipe Method

Debone the mutton leg, now beat with an steak hammer to flatten. Now marinate well with 4 tbsp papaya paste. Keep it aside.
In a bowl mix together 2 tbsp ginger garlic paste, 4 – 5 chopped green chilies, 1 tsp all spice powder, 1 tbsp chili powder, 1 tbsp crushed red pepper, salt to taste and 2 tbsp lemon juice. Mix well.
Now marinate the mutton leg with marinade mixture.
Wrap marinated leg in aluminum foil, sprinkle 2 chopped onion, 3 chopped tomatoes and 2 chopped capsicum on top.
Lastly bake in a preheated oven on 180 degrees for 30 – 35 minutes.
Now remove from oven, dish it out and serve hot


Mutton Chilly Fry Recipe

Recipe Ingredients

Mutton – 1 ½ kg.Mutton chilly fry
Cloves garlic – 20 nos.
Cloves – 6
Coriander seeds – 3 tsp.
Dry red chilies – 20 nos.
Cinnamon – 2 sticks
Onions – 4
Sour curd – 1 cup
Cardamoms – 6
Ginger – 4 inch piece
Turmeric powder – 1 tsp.
Coriander leaves – 1 bunch
Ripe lemon juice – 1
Ghee/oil – 6 tsp.
Salt to taste

Recipe Method

Wash the meat and cut into small pieces.
Slice onions finely into long pieces.
On other side cut garlic and ginger into fine pieces.
Heat 1 tsp ghee/oil on a pan and roast dry red chillies to dark color (ghee is preferred as it adds flavor)
Fry ginger, garlic and coriander seeds with little ghee separately or in the same pan putting roasted chillies in separate container.
In a large pan fry the onions with remaining ghee till golden brown or little crisp. Put some onions aside for garnishing.
Now add cardamoms, cloves and cinnamon and let it fry for one more minute.
Put the mutton, 1 tsp turmeric powder and salt. Cover the pan with a lid.
Tip: When the meat is half cooked pour little water on the lid so that it doesn't stick at the bottom.
Add yogurt/curd and other spices and let it cook on low flame until the meat is tender.
Tip: If needed you can add little hot water for cooking meat if not cooked
Mutton chilly fry is ready. Just before serving add little lemon juice and garnish with coriander leaves and crispy onions


Mutton Podina Recipe

Curd 1/2 cup
Zeera 1 tsp
Red Chilli powder 1 tsp

Recipe Method

Boil meat with salt, ½ onion, ginger, garlic paste, then heat the oil fry ½ onion add tomato, ginger, garlic all masala bhuno well add 1 cup water and mutton.
Cover and cook on low flame.
When oil comes on top add curd, bhuno, add ½ cup water, add podina cook for 5 minutes, garnish with podina, green chili and onion rings.

Almond Mutton Korma Recipe

Mutton 1 kg
Clarified butter 1 cup
Yogurt 1 cup
Onions 4 (sliced)
Green cardamoms 8 (crushed)
Almonds 10 (sliced)
All spice 1 tsp (powder)
Black cumin 1 tsp
Red chili 1 tbsp (powder)
Ginger garlic paste 1 tbsp
Coriander 2 tbsp (powder)
Poppy seeds ½ tbsp
Salt to taste

Recipe Method

In a bowl, add mutton, yogurt, ginger garlic paste, red chili powder, coriander powder, salt and all spice powder and mix well.
In a cooking pot, heat clarified butter and saute sliced onions till golden.
Spread fried onion on an absorbent paper to cool and crisp up.
Crush fried onion and add back to the cooking pot along with marinated mutton.
Cover the pot and cook on low flame.
When mutton is dry, stir and add 2 cups warm water and allow cooking until meat is cooked through.
When oil starts to separate, add sliced almonds, poppy seeds, cumin and crushed cardamoms, mix.
Allow simmering for 10 minutes and then serve with roghani naan


Fried Mutton Recipe

1 kilo Mutton pieces
2 Tomato chopped
2 Onions chopped
1/2 tsp Turmeric powder
1/2 tbsp Chilli powder
1 tbsp Ginger garlic paste
1 tbsp Pepper powder
1/2 tbsp Mustard seeds
1 tbsp Coriander powder
6 Curry leaves\
5 tbsps Oil
3 tbsps Coriander leavesto taste Salt

Recipe Method

Pressure cook mutton pieces with onion, tomato, ginger garlic paste, turmeric powder, chilli powder, coriander powder, pepper powder and salt for 7 whistles.
Heat oil in a pan add mustard seeds and curry leaves.
Add pressure cooked mutton pieces and stir well.
Cover with lid and cook till mutton pieces be in dry form.Stir well.
Garnish with coriander leaves
Serve hot.
