Turkish Eggs Recipe

Recipe Ingredients

1 tablespoon oil
1 large brown onion, halved, thinly sliced
2 teaspoons smoked paprika
2 x 410g cans tomato and paste with capsicum
4 eggs, at room temperature
4 rounds pita bread
1/2 cup roast garlic tzatziki

Recipe Method

Preheat oven to 180°C/160°C fan-forced. Heat oil in a medium frying pan over medium-high heat. Add onion. Cook, stirring, for 5 minutes or until softened. Add paprika. Cook, stirring, for 1 minute or until fragrant. Add tomato and 3/4 cup cold water. Season. Bring to a simmer.
Wrap pita bread in foil and place in oven. Cook for 5 minutes or until warm. Make 4 holes in tomato mixture. Crack 1 egg into each hole. Reduce heat to medium-low. Cook, covered, for 5 minutes or until eggs are cooked to your liking.
Serve with tzatziki and pita.




Egg Chaat


Ingredients:

Boiled eggs 3
Tomato ketchup 1 tbsp
Chili sauce 1 tsp
Tamarind pulp 3 tsp
Lemon juice 1 tsp
Roasted cumin 1 tsp
Salt to taste
Green chilly 1
chopped spring onion 1
Boondi 2-3 tbsp

Garam masala powder 1 tsp

Method:

In a bowl, mix tomato ketchup, chili sauce, tamarind pulp, lemon juice, roasted cumin, green chili and salt. In a plate, cut the boiled egg into two and spread the chutney over the boiled egg.
Sprinkle some chopped spring onion, garam masala, boondi over the eggs and serve immediately.

Anday ki karhai


Ingredients

Onion 1 large chopped

Eggs 6 beaten

Oil ½ cup

Potatoes 2 peeled, cubed and boiled

Ginger garlic 1 tbsp

Tomatoes 4 chopperized

Salt 1 tsp

Chili powder 1 tsp heaped

Allspice ½ tsp

Coriander leaves 2 tbsp

Green chilies 2 chopped

Coriander powder 1 tsp

Cumin powder 1 tsp

Turmeric ¼ tsp

Kasori methi 1 tsp heaped

Method

Heat oil add chopped onion fry till soft and transparent add in chopperized tomatoes with ginger garlic paste, salt, turmeric, chili powder, coriander and cumin. Fry well and add 6 whole eggs, let them set and then mix the whites very gently, do not mash. Add boiled cubed potato, lastly add kasori methi, allspice, green chilies and coriander leaves. Leave it on dum for 10 minutes. Serve with nan.

Anday Ki Roti (Chappati Filled With Mince & Eggs) Recipe



Recipe Ingredients
Mince 250 gm
Chili powder 1 tbsp
Ginger garlic paste 1 tbsp
Onion chopped 1
Green chilies chopped 4
Eggs 3
All spice 1 tsp
Salt 1/2 tsp
Chat masala 1 tsp
Tomato cubes (finely copped) 2
Spring onions (finely chopped) 1/2 cup
Coriander leaves (chopped) 2 tbsp
For Roti:
Flour 8 ounce
Wheat flour 2 ounce
Salt 1/2 tsp
Recipe Method
Cook mince with red chili powder, ginger garlic paste, onions, green chilies, salt and water.
Cook till mince is tender and place aside.
Mix flour, wheat flour and salt with water. Leave this dough for 5 minutes.
Make small balls of this dough and roll each ball to almost 6 inches.
Place square Samosa Patti over it and place some mice mixture over it.
Place tomatoes, spring onion, all spice powder and chat masala.
Pour whipped egg half over it and cover with other rolled dough.
Cut square with the help of pastry wheel and shallow fry till its golden brown.

Egg Chaat


Ingredients:
Boiled eggs 3
Tomato ketchup 1 tbsp
Chili sauce 1 tsp
Tamarind pulp 3 tsp
Lemon juice 1 tsp

Salt to taste

chopped spring onion 1
Boondi 2-3 tbsp
Garam masala powder 1 tsp
Method:
In a bowl, mix tomato ketchup, chili sauce, tamarind pulp, lemon juice, roasted cumin, green chili and salt. In a plate, cut the boiled egg into two and spread the chutney over the boiled egg.
Sprinkle some chopped spring onion, garam masala, boondi over the eggs and serve immediately.

1 tbsp All Spice
dash Kewra
2 Potatoes Diced
pinch saffron
1/2 cup Peas Boiled
1 tbsp Ginger Garlic paste
4 tbsps Mint Leaves Chopped
1 tbsp Turmeric Powder
5 een Chillies Chopped
1 tbsp Red Chilly Powder
500 grams Rice Boiled
1/2 cup Crushed Brown Onions
4 Eggs Boiled
1 cup Yogurt
1/2 cup Oil

Recipe Method

Heat oil in a pan.
Add whole spices and stir well.
Add crushed onions, ginger garlic paste, turmeric and red chilly powder. Stir and fry till the oil separates.
Add potatoes, peas and yogurt.
Bring to a boil, cover and cook till vegetables are tender.
Add eggs.
In another pan spread 1/2 of the boiled rice, over this spread the contents of the 1st pan like a layer, sprinkle the coriander and mint leaves, and spread the remaining rice over this.
Sprinkle the kewra and saffron on top.
Cover the pot and simmer over a low heat for 15 minutes.
Serve with any raita

Recipe Method

Take 2 cups flour and add in some salt, mix it and make dough. Make a thick paste by combining 2 tbsp flour and 2 tbsp water. Take a bowl and add in 6 eggs and add in chopped green chilies, ½ bunch chopped green coriander, ½ tsp turmeric, ½ fresh milk, 1 tsp crushed black pepper and 1 tbsp red chili flakes. Beat it. Take clarified butter in the pan cook eggs in it and keep on moving the spoon. Roll the dough add the egg mixture on it and then cover it with partha.



Poached Eggs Recipe

Recipe Ingredients

4 eggs
5 vinegar
2 salt
pepper
1 frying pan
4 rings
1 fish slice
4 ramekins

Recipe Method

Place a pan, half filled with water, on a medium heat. Add vinegar and salt. Place the four metal rings in the pan and bring to a simmer.
Crack one egg on the side of the ramekin and then carefully break it in. Repeat with the remaining 3 eggs.
Carefully pour each egg into one of the four rings and leave to cook for 3-4 minutes.
With a cloth to protect your hands remove the metal rings from the pan, leaving the eggs still in.
Take the pan off the heat and serve the eggs immediately on some toast, seasoning to taste just before serving.


Egg Salad Recipe


Recipe Ingredients

6 eggs
¼ c. mayonnaise
1 Tbsp Dijon mustard
1 Tbsp lemon juice
¼ c. celery, minced
¼ c. onion, minced
salt and pepper to taste

Recipe Method

In large saucepan cover eggs with cold water. Bring water to a rolling boil and immediately remove from heat. Cover, and let eggs stand for 12 minutes.
Remove from hot water, and place eggs in an ice bath for 5-10 minutes. Peel, and set aside.
In medium bowl combine mayonnaise, mustard, lemon juice, onions, and celery.
Chop eggs into large chunks and gently toss with dressing. Season with salt and pepper.
Transfer to air tight container and chill 2-4 hours before serving

Recipe Method

Boil 25 gm white lentils and keep aside.
Beat 2 eggs in a bowl.
Heat 4 tbsp oil in a pan, add beaten eggs, boiled lentils, 1 chopped onion, 1 chopped tomato, 3 – 4 green chilies, coriander leaves and salt to taste.

Take a pan in oil Sauté the onions to golden brown.

Masala Egg Paratha Recipe

Recipe Ingredients

Basic Chapati/Paratha Dough
Eggs – 1 for every 2 Paratha
Tomatoes – Finely chopped (as needed, to taste)
Onions – Finely chopped (as needed, to taste)
Cilantro – Finely chopped (as needed, to taste)
Green Chilies – Finely chopped (as needed, to taste)
Salt – to taste
Any or all of the following (to taste):
Red Chili Powder
Chaat Masala
Coriander Powder
Cumin Powder
For the Cheese version, add any kind of shredded cheese (preferably one that melts). For kids, you can add only cheese to the beaten eggs.

Recipe Method

Beat Eggs and mix all of the above ingredients (except dough) together with the beaten
eggs. Keep aside.
Roll out a golf ball size portion of dough into a 4-5 inch disc. Dip into dry flour to prevent it from sticking to the surface.
Coat a thin layer of oil on the disc and sprinkle dry flour onto it.
Fold the disc into a semi-circle, coat another thin layer of oil and sprinkle dry flour on it.
Fold the semi-circle into a triangle, dip it into dry flour and roll it out into a larger triangle.
Place triangle onto a hot tava and flip it once bubbles appear.
Wait another 20-30 seconds until it starts to puff up. With a butter knife, gently open up the top layer of the triangle to form a pocket.
Pour in approx. 1/2 egg worth of mixture into the pocket and close it.
Allow it to cook on low flame for 20-30 seconds and gently flip it without letting all of the egg mixture spill out. A little will ooze out but that’s ok.
Cook once again, pressing slightly until all of the raw egg is cooked inside.
Serve immediately or keep in an insulated container until ready to serve.
Tastes great with Ketchup or chutney.
