Kharay Masalay ka Keema



Ingredients:
Beef Mince ½ kg
Garlic Paste 1 tbsp
Finely Chopped Onions 2
Whole Black Pepper 1 tsp
Cumin Seeds 1 tsp
Black Cardamoms 3-4
Cinnamon 2-3 sticks
Cloves 4-5
Bay Leaves 2-3
Crushed Red Chili 1 tbsp
Green Chilies 5- 6
Coriander Leaves ½ bunch
Ginger (Finely Sliced) 1 inch piece
Oil 4-5 tbsp
Salt to taste
Method
Take a cooking pan add 4-5 tbsp of oil , heat the oil add 1 tsp of whole black pepper corns, 1 tsp of whole cumin seeds, 3-4 black cardamoms, 2-3 strands of cinnamon, 4-5 cloves, 2-3 bay leaves stir fry when its popping then add 2 finely chopped onions, 1 tbsp of ginger garlic paste and fry, when the onion are light brown add ½ kg of beef mince mix it well and roasted. When the mince is almost tender add ½ bunch of coriander, 5-6 green chilies mix it well and steam it, when the steam is done take it out in a serving bowl and serve it.

Kashmiri Keema Recipe


Ingredients

Beef mince (With Fat) ½ kg

Chopped Garlic 1 tbsp

Ginger Powder 1 tsp

Red Chili Powder 1 tsp

Cumin Powder ½ tsp

All Spice Powder 1 tsp

Black Cardamoms Seeds 1/3 tsp

Bay Leaves 2-3

Fennel Seeds Powder ½ tsp

Kashmiri Chili Paste ½ tsp

Bread Slices as required

Egg 1

Yogurt 250 grams

Coriander ½ bunch

Oil as required

Salt to taste

Method

Take a chopper add ½ cup of beef mince , 1 tsp of ginger powder, ½ tsp of cumin powder, 1 tsp of red chili powder, 1 tsp of all spice powder, ½ tsp of crushed fennel seeds add to taste salt , 1 egg and add as required bread slice mix it well. Now take little bit of mince mixture in your palm and shape it and fry it and set aside. On a mean while take another cooking pan add some oil add 1 tbsp of chopped garlic, 2-3 bay leaves and fry then 1/3 tsp of black cardamoms seeds, ½ cup of red chili paste add 250 grams yogurt and roasted when the yogurt is dry so add as required water mix it well and cook until the mixture is all together. Now add fried kebab’s steam it and add ½ bunch of coriander and take it out in a serving platter and serve it.

Sehri Keema



Ingredients

Beef Mince 1/2 kg
Yogurt 1 cup
Lemon 1
Fried Onion 1 cup
Salt
Oil 1/2 cup
Cumin 1 tsp
Papaya paste 1 tbsp
Red chili flakes 1 tsp
All spice (garam masala) 1 tsp
Turmeric 1 /2 tsp
Ginger garlic paste 2 tsp
Green chilies as required
Green coriader as required


Cooking Directions

Wash mince add papaya paste, red chili flakes, turmeric, salt, cumin and garam masala mix well.

Also add fry onion, yogurt, ginger garlic paste and marinate for half hour.

Now heat oil in a pan and cook cover for half hour.

When water dries add chopped green coriander and green chilies, squeeze lemon juice and serve with paratha or chapatti.

Chicken Qeema Pilao


Ingredients:
Rice 1-1/2 cups
Chicken mince 200 grams
Oil 4 tbsp
Green cardamoms 2
Cumin seeds 1 tsp
Cloves 2
Cinnamon 1/2 inch stick
Black peppercorns 8-10
Onions (sliced) 3 medium
Green chillies 3-4
Chopped tomatoes 3-4
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Red chilli powder 1 tsp
Garam masala powder 1/2 tsp
Chopped coriander leaves 2 tbsp
Mint leaves (torn) 15-20
Salt to taste

Method:
Soak the rice in sufficient water for half an hour. Drain and set aside. Heat oil in a deep pan. Add green cardamoms, cumin seeds, cloves, cinnamon, black peppercorns and stir. Add onion and sauté for two minutes. Add hand broken green chillies, chicken qeema and stir. Add tomatoes, ginger paste, garlic paste and stir. Add red chili powder, garam masala powder and stir. Add soaked and drained rice. Add four cups of water, coriander leaves, mint leaves and salt and stir. When the water comes to a boil, cover and reduce heat. Cook till done. Serve hot.

QEEMA KACHORI


INGREDIENTS:
Minced Beef ½ kg Finely Chopped Onions 1 Ginger Garlic Paste 1 tbsp Lemons 2 Crushed Red Chilies 1 tsp Crushed Black Pepper 1 tsp Salt as required Finely Chopped Green Coriander ½ bunch Chopped Green Chilies 4 Roasted and Crushed White Cumin 1 tsp Oil for frying as required FOR KACHORI: Flour 2 bowls Soda Bi Carbonate 1 tsp Jaggery Syrup 2 tbsp Salt as required.
METHOD
First in a try add 2 bowls of flour, salt as required, 2 tbsp Jaggery Syrup and 1 tsp Soda Bicarbonate and mix it properly and add water so that the dough remains consistent. Do not knead it hard. Cover it so that it rises well. In a frying pan add ½ kg minced beef, 1 tbsp ginger garlic paste and salt as required and dry out the water. Now add 1 tsp crushed red chilies, 1 tsp roasted and crushed white cumin, 1 tsp crushed black pepper and 2 lemons (lemon juice) and cook it and then take it out from the stove. When it cools down, then add 1 finely chopped onions, 4 green chilies and ½ bunch green coriander. Now add oil as required in a pan.

Qeema Biryani by Zubaida Tariq



Ingredients:
Beef Mince 1 kg
Chopped Onions 2 ½ cups
Red Chili 1 tbsp
Ginger Garlic Paste 1 tbsp
Lemon Juice 4
Turmeric 1 tsp
Yogurt 1 cup
All Spice Powder 1 tsp
Mint Leaves a bunch
Chopped Green Chilies 8
Biryani Masala 1 cup
Oil 1 cup
Butter 1 tbsp
Fresh Milk 1 cup
Yellow Food Color some
Salt to taste
To Boil Rice:
Mint Leaves ½ bunch
Green Chilies 3
Salt to taste
All Spices some
White Vin/b>egar 1 tbsp
Method:
In a pan, add in 1 cup oil and add in chopped onion and fry till golden brown.
Add in beef mince, salt and 1 tbsp ginger garlic paste. Cook till water dries.
Add in 1 tbsp red chili, turmeric, yogurt, lemon juice, mint leaves, chopped green chilies and all spice. Cook it.
Add in 2 ½ cup rice, mint leaves, 3 green chilies, salt, all spice and 1 tbsp white vinegar and boil.
Drain the water.
Grease the pan, layer half rice.
Layer mince
Then layer rice, add in yellow color, lemon juice and simmer.
Simmer and dish it out. Garnish it with fried onion and mint leaves.

Tawa Makhni Keema Recipe



Recipe Ingredients

Mince (coarsely chopped) ½ kg
Onion 250 gm
Yogurt 250 gm
Coriander leaves 1 bunch
Green chilies 12
Oil ½ cup
Cumin seeds 1 tsp
Salt 1 tsp
Crushed black pepper 1 tsp
All spice powder 1 tsp
Ginger garlic paste 1 tbsp
Coriander seeds 1 tbsp
Crushed red pepper 2 tsp
Ginger chopped 2 tbsp
Butter 50 gm
Papaya paste 1 tbsp

Recipe Method

Marinate ½ kg mince with 1 tbsp raw papaya paste, 250 gm yogurt, 1 tbsp ginger garlic paste and 1 tsp salt. Keep aside for 30 minutes.
Now cook marinated beef mince with ½ cup oil on a hot griddle over high flame.
Then add crushed mixture of 1 tsp cumin seeds, 1 tsp coriander seeds and 12 green chilies.
Now add 250 gm finely chopped onion, 1 tsp allspice powder, 2 tsp crushed red pepper, 1 tsp crushed black pepper, 1 bunch of coriander leaves and 50 gm butter.
Simmer for 10 minutes till mince is tender. Remove in a dish, garnish with 2 tbsp ginger juliennes and serve with paratha.

Ingredients
Mince ½ kg (coarsely crushed)

Onion 250 gm coarsely sliced

Crushed garlic 1 tbsp

Ginger julienne 2 tbsp

Whole button red chilies 10

Salt 1 tsp

Mix whole spices 1 tbsp

White cumin 1 tsp

Oil ½ cup

Yogurt ¾ cup

Allspice ½ tsp

Coriander leaves 2 tbsp

Green chilies 2

Method

In a pan add coarsely chopped onion, ginger garlic, button red chilies, mince, salt, whole spices, white cumin and oil, cover and cook till half done then add whipped curd again cover and leave it till done and oil comes on top, lastly add allspice, coriander and green chilies.

Ingredients

Mince ½ kg (doubled machined)

Brown onion coarsely crushed ½ cup

Yogurt 1 cup

Kachri powder 1 tbsp heaped

Chili powder 1 ½ tsp

Turmeric ¼ tsp

Allspice ½ tsp heaped

Salt 1 tsp

Nutmeg grinded ¼ tsp

Mace grinded ¼ tsp

Green cardamom grinded ¼ tsp

Ginger garlic 1 tbsp heaped

Poppy seeds roasted and grinded 1 tbsp

Almonds 10 roasted and grinded

Desiccated coconut 1 tbsp roasted and grinded

Oil ¾ cup

Method

In a bowl add yogurt with all the above ingredients, marinate your mince in this for 4 hours, put to cook in a pan covered till mince tender and oil comes on top. Fry well give dum of coal, serve garnished with chopped coriander, green chilies and ginger julienne.

Ingredients

Mince ½ kg

Oil ½ cup

Onion 1 large sliced

Ginger garlic paste 1 tbsp

Salt 1 tsp heaped

Chili powder 1 ½ tsp

Turmeric ½ tsp

Crushed cumin 1 tsp

Yogurt ½ cup

Milk ½ cup

Spinach ½ kg

Fenugreek bunch 4 small

Dill 1 bunch

Method

Heat oil half cup add 1 large sliced onion, fry till light golden, add ginger garlic paste with mince, fry well, add in salt, turmeric, chili powder, cumin roasted and crush, fry well, add half cup water, cover and cook till mince tender then add half cup yogurt, fry well add in spinach, fenugreek and dill mixture with half cup milk, lastly add chopped coriander leaves and green chilies, leave it on dum.

Method for spinach

Wash well and blanched together spinach, dill and fenugreek for 10 minutes, chopperize and use.

Achari hara Keema


Ingredients

Mince ½ kg

Onion finely chopped 1 cup

Tomato blended 2

Roasted cumin crushed 1 tsp

Roasted coriander crushed 1 tsp

All spice powder 1 tsp

Turmeric ¼ tsp

Salt 1 ½ tsp

Oil ½ cup

Ingredients for hara masala

Green chilies 10

Coriander 4 tbsp

Ginger 2 inch piece

Garlic 6 cloves

Yogurt 2 tbsp

Mango Pickle 2 tbsp

Method

Marinate ½ kg mince with grinded hara masala for 30 minutes. Heat ½ cup oil fry 1 cup chopped onion till transparent, add marinated mince with 1 ½ tsp salt, ¼ tsp turmeric and 2 blended tomatoes, cover and cook for 10 minutes then add 1 tsp cumin crushed, 1 tsp coriander crushed, 1 tsp all spice powder, 2 tbsp yogurt and fry well when done add 2 tbsp mango pickle mix well, serve garnish with 1 tsp coriander and 10 green chilies.
